This is easily my favorite side dish by far. After pinning this recipe from the la bella vita delicious & beautiful living blog, it exploded with repins–almost 12,000! And rightly so. This is delicious! I am very thankful that Roz introduced me to this delicious salad.
Fresh Mozzarella, Basil, Tomato Salad
- Grape or Cherry Tomatoes halved
- Fresh Mozzarella ripped into chunks or cubed
- Fresh Basil ripped into chunks
- Extra Virgin Olive Oil
- Balsamic Vinegar
- Salt and Pepper to taste
What? No quantities?!? Don’t worry. It all depends on how much you want to make–just for you or for a party. It’s all about proper proportions of tomatoes, cheese, basil, and oils.
I recommend having an equal part tomatoes and fresh mozzarella (perhaps a bit more tomatoes). Next, add ripped fresh basil leaves into the tomato and fresh mozzarella mixture until about a fourth of the dish is fresh basil. Add in olive oil so that it is lightly covering the mixture. Do not add in so much that it is pooling in the bottom of the bowl. Just a light drizzle. Mix. Add in half the balsamic vinegar as olive oil so there is a 2:1 ratio between the olive oil and balsamic. For example: 1 tablespoon of olive oil and a 1/2 tablespoon of balsamic. Mix again. Finally, add salt and pepper to taste. I personally like extra pepper–enough to see the flecks on the cheese.
