Chocolate Covered S’mores

I have been meaning to bake more, but I have zero faith in my will power.  Last week I bought frosted animal crackers and ate half of the box in under a half hour.  My sweet tooth is out of control.  So I just have to remove all sweets from my temptations all together and not bake.  But, I have had some requests for some sweet recipes.  I work as a teaching assistant to a criminal law professor at school, and we had a practice exam coming up.  It was the perfect time to try out some new dessert recipes without devouring the entire batch myself.

Matt really took the lead in baking this.  He wanted something fun and easy (and that included marshmallows).  This recipe was just that–and it allowed him to throw chocolate at me so it was a win-win for him.  He was pretty proud of his results.

Ingredients

  • Graham crackers
  • Marshmallows
  • Chocolate chips, candy bars, really anything you want in the middle
  • Chocolate to melt (white, dark, milk)
  • Sprinkles (optional)

Directions

First, cover a cookie tray with aluminum foil.  Split the graham cracker in halves and arrange the chocolate chips and marshmallows on top.

Place in the oven for 2 minutes or so.  Keep a close eye on them so that they do not burn.  When the chocolate chips are getting melty and the marshmallow is starting to mush, take out. Place the halves on top of each other with each marshmallow being paired with a chocolate side.

Place in the freezer for 5 minutes. While in the freezer, melt chocolate in microwave or over the stove.  Careful to make sure that the chocolate does not burn.  Take bars out of the freezer and dip bars into the melted chocolate.  Add sprinkles.  Place on parchment paper to cool.  Enjoy!

  1. These were great! You’ll have to tell Matt we really enjoyed them 🙂 I’m eagerly awaiting your peppermint patty cookie recipe!

  2. These chocolate covered smores are probably less points than those frosting covered animal crackers?! PUT THE ANIMAL CRACKERS DOWN! 🙂

    1. Bahahaha! Not allowing myself to even walk down the cracker aisle. I can’t trust myself with that much responsibility.
