Grilling season is upon us! After a not-so-brutal winter, I miss the summer cookouts. As much as I love a good hamburger, red meat is not the healthiest of options. This black bean alternative is a great substitute and tastes better than a beef burger. Top it off with guacamole, this burger is an instant summer classic. This comes in at only 5 Weight Watcher’s Plus Points compared to the 8 Weight Watcher’s Plus Points for a 98% lean beef burger (patties only. buns are extra points). I paired this meal with my sesame garlic green beans.
Ingredients
- 1 can of black beans, drained and washed
- 1 Tablespoon red pepper flakes
- 1 garlic clove, minced
- 1/4 cup breadcrumbs
- 1/4 cup cilantro, finely diced
- 1 Tablespoon parsley
- 1 egg
- 1/2 jalapeno, finely diced
- 1/4 onion, finely diced
- Salt and pepper to taste
Directions
In a large bowl, combine garlic, red pepper, breadcrumbs, cilantro, parsley, onion, jalapeno, and salt and pepper.
In a separate bowl, smash washed beans. Add to dry mixture. Add whisked egg. Fold ingredients together until well-mixed.
Form into flat patties. Cook on outside grill or on stove top.
Top with guacamole, tomato, lettuce, and/or onion. Enjoy!
