Finals are right around the corner which means more slow cooker dinners. This pulled pork sandwich is a great meal after a study-filled day. There is only a little bit of prep work, and the slow cooker does the rest! Matt loved this meal so much that he ate two pork-stuffed sandwiches. That’s my piggie! For 11 Weight Watcher points per sandwich, it’s so filling that it’s worth every point!

I have always been a sandwich lover. From peanut butter and jelly to my “world famous” turkey, avocado, tomato stacked sandwich, I can always go for a sandwich. This chicken pita has a zesty, fresh taste that is perfect for lunch or dinner. With all the hype around the Hunger Games, I named this dish after my favorite character Peeta Mellark.
Key Lime Grilled Chicken Kabobs
I woke up this morning and realized I only have one month left until I graduate from law school. And that means a summer of studying for the bar. And if I’m gonna stay sane, there is going to have to be lots of cook outs, happy hours, and patio drinking (I’m talking to you Mel Bakker!)
I’m too excited to wait for warm weather so I broke out some new grilling recipes. Tonight I made Key Lime Grilled Chicken Kabobs for only 5 Weight Watcher’s Plus Points.
Stuffed Peppers and Green Beans with Goat Cheese
I took a big step today–not only did I cook a main dish, I made an entire meal. Not in true Lindsay form, but I’m taking this whole learning to cook thing to heart.

Chatterbox Bloody Mary
Today I continued my search for the best Bloody Mary in the Twin cities. We went to Chatterbox for brunch–it’s a fun restaurant in St. Paul that has board games for you to play while you wait for your food. The special thing about Chatterbox’s Bloody is that they don’t use vodka. Instead, it has saki. This change in alcohol makes the drink much smoother than your average bloody. Still, the toppings are weak. No cheese, only a baby pickle, and a cherry tomato?!? Really don’t feel like the cherry tomato is necessary since the entire drink has that overall tomato flavor. Rather have a brussel sprout that compliments the tomato flavor instead of just piling on more tomato. Still, the chasers at Chatterbox are excellent. Any type of beer for no additional charge. Plus large Bloody Marys are half off during brunch. Cannot say no to that!
Cilantro Lime Chicken Burritos
My favorite go-to meal. This fun Mexican dish is so easy to make because you just toss everything into the slow cooker before you leave for work, and you come home to a wonderful meal waiting to be devoured! Matt loves this meal and asks me to make it at least once a week.
Banana Bread with a Bite
I don’t normally bake. My mother and sister are excellent bakers so whatever I make, it is never as good as their version. But I found this great banana bread recipe, and I had to try it. (Plus my mom and sister haven’t made it yet so mine is the best tasting one so far!) I love the combination of chocolate and banana, and Matt loves dark chocolate so this banana bread is perfect for us.
The cayenne pepper adds a spicy after taste. Matt kept saying that his tongue was tingly but in a good way. This was definitely outside my p90x diet, so I could only have a small sample. But it was still fun to make! So here’s Dark Chocolate Banana Bread with Cayenne.
Sun-Dried Tomato Turkey Meatballs
I have always loved meatballs. But, now that I am trying to eat healthier, I cut back on eating red meat like ground beef. This turkey meatball recipe has all the great taste of an Italian meatball without all the guilt. The sun-dried tomatoes and Parmesan cheese add a wonderful flavor to this dish.
Slow Cooker Italian Beef Sandwiches
Matt loves Italian beef. A lot. So when I found this slow cook recipe that only need four ingredients, I had to try it out. This meal is easy to make and tastes delicious. And there are only four ingredients!
Asian Glazed Chicken
A college tradition at La Crosse was Wednesday night wings. Every Wednesday, you and all your friends would walk down to 3rd street to get 10 cent wings and dollar PBRs. It was a fun tradition that Matt really misses now that he’s a “grown up” who lives a city where Wednesday wings means 75 cents a wing. Not much of a deal. So I decided we could make our own Wednesday night wings. Only this time, they would be healthier. Now that I am in the middle of p90x, I really can’t be eating deep fried wings. I found this great recipe from SkinnyTaste that is amazing. It’s a mixture between our Wednesday wings and Chinese food. And the best part is it is healthier than both! It is a bit saltier so you will want to keep your portion small. (unless you are Matt who devoured that entire plate!)
